C sugar
1 1/2 C oil
4 eggs
2 1/4 C flour
2 tsp salt
2 tsp baking soda
2 tsp cinnamon
3 C grated carrots
optional: 1 1/2 C chopped walnuts
Preheat oven 350.
Grease and flour pan. 9x13
Combine, sugar, oil and eggs, beating for 2 minutes.
Add in dry ingredients, beat for 1 minute. Stir in carrots and nuts.
Bake for 1 hour.
Cream Cheese frosting:
8 oz cream cheese, softened
1/2 stick butter, softened
2 tsp vanilla
1 pound powder sugar
Cream butter and cheese, throughly. Add vanilla. Mix in sugar until creamy. Spread on cooled Carrot cake.
